Podere le Catastine produces oil, wine, grappa, wine infused by peach tree leaves.
With passion and enthusiasm, Francesca and her family care for the grounds of Podere le Catastine which are around 28 hectares.
WINES
From three large vineyards, excellent young wines are produced, suitable for all occasions: the local red, produced from the fermentation of Sangiovese, Montepulciano and Cannaiolo grapes. The harvest is done by hand, choosing carefully the best grapes. By harvesting in this way, there follows a traditional fermentation in red through maceration; subsequently, it rests for at least 2/3 months in steel vats, where the process is completed. The wine is of ruby colour and of intense perfume.
The local white is obtained from Tuscan Trebbiano grapes, Malvasia di Candia and Tuscan Malvasia which are harvested by hand; the must from the first pressing, is left to rest in steel vats for at least 6/7 months, where the process is completed and clarified naturally. The wine is a straw colour, with intense perfumes.

What is the secret of the quality of this wine? The land is part of the explanation, a unique mixture of calcareous marlstone which gives an unmistakeable character to the Sangiovese. Another part of the explanation is the climate: a combination of warm days and clear nights that has an enormous influence on the development of those aromas, an inebriating mix of fruit and flowers. At the end of the day, there are many other reasons: ventilation, altitude, the soil, the proximity to the sea, the presence of refreshing woods in the hotter parts of summer.
GRAPPA
Dedicated to those who are in search of the most authentic essence of Tuscan grappa, the Podere le Catastine grappa follows the original recipe. From the local grapes used for the wine, fruity and perfumed, the marc emerges which forms the primary material of the grappa. It is all left to ferment for the right amount of time before distillation; its soft taste and the moderate alcoholic level make it ideal for tasting the typical taste of Tuscany, on many different occasions.
EXTRA-VIRGIN OLIVE OIL
All the countryside surrounding agriturismo is characterised by small walls, built by hand in bygone eras and which have guaranteed the establishment of a particular and specialised way of cultivating olives. From the olive trees, an exceptional quality of extra-virgin olive is obtained, an ideal condiment and irresistible component of eating well, contributing towards a healthy diet. Around 250 typical varieties of Monte Pisano olive trees are cultivated: the Lecciano, with a sweet and fruity taste, the Razzo (ancient variety which is derived from the most noteworthy branches) with a strong and bitter taste, and the Moraiolo. The olives, once they have reached maturity, are collected by handpicking and they are ground within 24 hours to preserve their organoleptic qualities. “It is enough to smell it to call to mind the image of the olive trees, kissed by the sun. The extra-virgin olive oil from Tuscan olives comes down from a thousand of years of tradition and even today, to reinforce these values, at Podere le Catastine, oil is cultivated as it once was.”

LIQUEURS: AROMATIC WINE WITH PEACH TREE LEAF
Made to be sipped in front of an open fire after dinner, the aromatic wine with peach tree leaf is produced from a recipe that has been handed down for generations and is guarded jealously. Produced by the natural infusion of the leaves of the peach tree, cultivated by the company, it is set apart from all other products by the absolute superiority and fullness of taste and fragrance. All phases of production respect the traditional artisan methods and permit the full taste and natural fragrance to be preserved and improved.
VINSANTO
Is one of the products most tightly connected with the memory of our people, and evokes the image of the country, the rural world and farmer family. There was never a family who did not have in their home a bottle of vinsanto to offer to their guests. It has always been the symbol of friendship and hospitality: always offered to whoever visits; the first drink used whenever a toast is in order. The secret is in the drying: a process which requires time and patience. Ideal for the end of a meal (particularly with almond biscuits), thanks to the richness of aromas, its softness on the palate and its high alcoholic content (18°). It is during the drying and then in the keg that the long and still not fully understood biochemical reactions take place, that act upon the sugar and other properties, until obtaining a unique product. We produce small quantities: enough for our own consumption, to offer to or sell to our guests, as a precious nectar.
In our shop, our guests can taste and buy products of the highest quality, such as cheeses, honey and jams, produced with care by our friends who love, as much as we do, nature and what our land has to offer.
There are the fresh and aged cheeses that Maria makes with milk from her own sheep, and the honey from Luana, a product for which there are no words to describe the taste. It is enough simply to think of nature and health and you think immediately of honey....
The jams are produced with fruit which is left to mature on the tree; you will appreciate their goodness, spreading them on a slice of good bread, re-enacting the pleasure of a peasant’s afternoon snack.
